[xmonad] beginner xmonad question

Correct.  xmonad can be used on its own, you do not have to use it
with gnome. Those instructions are indeed for replacing metacity with
xmonad. If you do nothing, you will be able to choose bewteen (1)
gnome+metacity and (2) xmonad.
