Let me parenthesise and rename
(n + 1) +++ 1 = n
This defines a function +++, first argument is a n+1 pattern, second
argument is 1.
In the same way,
(+) + 1 + 1 = (+)
defines a function +, first argument is n+1 (but using (+) as n),
second argument is 1.
